Awaji Mitsuki - Japanese Cuisine
Produced by Chef Hisato Nakahigashi, fourth-generation proprietor of three Michelin-starred Kyoto ryokan Miyamasou, this dining experience reimagines the enduring culinary heritage of Awaji Island through a contemporary lens. Awaji Mitsuki presents an original interpretation of Tsumikusa Cuisine, the traditional Japanese art of foraged cuisine, celebrating the seasonal gifts of both land and sea.

Hisato Nakahigashi
Since 1998, he has devoted himself to exploring tsumikusa cuisine as the fourth-generation proprietor of Miyamaso. With an exceptional ability to understand and explain Japanese cuisine through the logic of nature and seasonality, he has dedicated his career to dishes that celebrate the gifts of the mountains, including wild herbs and river fish. Miyamaso received one Michelin star in 2010 and two stars in 2011, before ultimately earning three stars in the MICHELIN Guide Kyoto Osaka 2026.
Awaji Togei - Kappo Cuisine
Produced by Chef Kosei Togei, proprietor of the acclaimed Asai Togei in Osaka serving Kappo Cuisine, a traditional style of Japanese dining in which the chef prepares seasonal ingredients before the guests' eyes. This all-day-dining experience is founded upon the five essential techniques of Japanese cuisine - raw preparation, soups, simmering, grilling, and frying.

Kosei Togei
Born on Yonaguni Island, Okinawa Prefecture, in 1959, Chef Togei began his training at Kigawa Asai in Osaka's Shinsaibashi district. In 2008, he succeeded the restaurant, reopening it under the name Asai Togei. His distinctive Kappo style combines the traditions of Osaka cuisine, refined over decades of study, with the flavors of his native Okinawa.
Awaji Sougo - Shojin Cuisine
Produced by Chef Daisuke Nomura, who earned two Michelin stars as third-generation head chef of Tokyo's renowned Shojin (Buddhist plant-based cuisine) restaurant Daigo, before founding SOUGO. The wellness cuisine at Awaji Sougo reimagines the 13th-century Japanese philosophy of shojin, rooted in reverence for all life, bringing centuries of wisdom to the modern table.

Daisuke Nomura
Born as the eldest son of the family behind Daigo, a shojin restaurant in Atago, Tokyo. He developed his career as Daigo’s third-generation head chef, earning two Michelin stars continuously from 2008. In 2015, he left Daigo to open Shojin SOUGO. Driven by a desire to make shojin cuisine accessible to more guests, the restaurant serves dishes rooted in tradition yet infused with a contemporary sensibility, all within a relaxed dining environment.
Sushi Minami
Produced by the local sushi restaurant Awajishima Nobu, Sushi Minami showcases the exceptional seafood of the surrounding seas. Owner and sushi chef of Awajishima Wataru. After honing his craft at renowned establishments across Japan, he returned to his native Awaji Island to open his own restaurant. His sushi showcases the finest seasonal fish from the Seto Inland Sea, bringing out the unique character of each ingredient and captivating discerning diners. He is one of Awaji Island’s leading sushi chefs.
Terre - Innovative French Cuisine
Created by Kosuke Nabeta, chef-owner of the Michelin-starred Restaurant Sola in Paris, Terre presents a distinctive expression of wellness gastronomy, where French culinary artistry meets the time-honored techniques of Japan. Yuka Wakada Yuka Wakada
Born in Kyoto prefecture, Wakata began her bartending career in Osaka. In 2024, she was named champion of the Kansai Cocktail Competition organized by the Nippon Bartenders Association, followed by a second-place finish at the National Cocktail Competition in 2026.
